Homemade Tomato Soup

Happy Tuesday!

I am a big fan of soup during winter, but not a huge fan of the can-o-sodium that you buy on the shelf. Since getting into this health kick, I’ve learned the valuable lesson of reading the label, thus extremely cutting down my list of favorite foods.

But back to soup.

If you haven’t heard of her, Rosanna Pansino has an amazing YouTube channel called Nerdy Nummies and it is just gold. She makes fun recipes and is generally a very funny person. I came across her video for Wonder Woman Tomato Soup and I knew I would need to give it a try!

“Let’s put it all together!”

2 cups of chopped carrot

2 cups of chopped celery

1 1/2 cups of chopped onion

2 tbsp of chopped garlic

olive oil for drizzling

2 cans of diced tomatoes

5 tbsp of tomato paste

2 cans of tomato juice

3 sprigs of thyme

3 stalks of parsley

 1/2 cup of cream

1 cup of vegetable broth

First, make your vegetable broth via it’s instructions and set it aside. Then, chop up your carrots, celery, onion, and garlic and toss in a medium to large pot. Drizzle with olive oil and cook for five minutes. After your five minutes are up, add your diced tomatoes, tomato paste, tomato juice, thyme, parsley, and heavy cream. Tip; tie your parsley and thyme together as you will need to fish it out before eating! Add salt and pepper to taste. Stir everything together then bring to a boil on high. Once boiling, cut your heat to low and let simmer with the lid on for thirty minutes. After that, toss your mixture into a blender and blend well. Serve, and enjoy!

Bonus; Once I made this up and tasted it, I realized that it tasted exactly like the tomato soup that is served at Panera Bread!
